Healthy Eats in Washington, D.C.

I have lived in D.C. for about 3 years now. My hubby and I are always on the lookout for new healthy places to eat here. We are fortunate that D.C. has quite a few healthy takeout and dine in options. So if you are in the D.C. area be sure check out one of the many salad bars like Chop't and Sweetgreen. These restaurants have tons of healthy options like Kale and Quinoa. Also, most of the restaurants below are chains so you can find them in several areas (around D.C.). My favorite Chop't salad is the Harvest Cobb.  Most of the sites below have calorie info online.

I think a key to staying healthy is doing research about your food (e.g., nutrition info). So if you have not done so already take sometime to see what healthy options there are in you city. That way when you need a meal in a hurry you know exactly where to go.  Check out the list below for healthy eats in D.C

Soul Food Sunday & Healthy Eating Tips

Use the recipe below to create a wonderful evening and control the high fat, salt, and sugar that restaurants add to your food. Chef Rock's Valentine's Day Meal

Spicy Pickled Vegetables
1 cup rice vinegar
1/4 cup sugar
1 tablespoon salt
1/4 cup water
1 carrot, peeled and cut at an angle into 1/2-inch pieces
1 red pepper, cut into 1/2-inch strips
1 yellow pepper, cut into 1/2-inch strips
1 habenero pepper seeded finely shredded
1 jalapeno pepper seeded and shredded
4 baby patty pan squash cut in half
2 ounces purple wax beans
2 ounces yellow wax beans
2 ounces French green beans

In a small saucepan, heat vinegar, sugar, salt, and water until sugar and salt dissolve and mixture is heated through. Place vegetables in a medium bowl, and pour hot pickling mixture over vegetables. Let vegetables sit for 1 hour at room temperature or 4 hours, covered, in the refrigerator. Serve cold or at room temperature.

Sweet Sautéed Lobster 2 lobster claws or tails cooked and taken out of the shell

2 tablespoons butter
1 tablespoon butter
1 cup of moscato wine (or another sweet wine you enjoy)
1 lemon juiced
1⁄2 cup cream

Heat a medium size sauté pan over medium high heat. Add butter and sugar. Cook until the utter has completely melted and add the lobster. Sauté for one minute. Deglaze with the wine. Add the lemon juice. Simmer this mixture for a minute or two until a smooth texture has been reached, about two minutes. Then add cream and reduce until the sauce is the texture of a smooth caramel. Taste and adjust seasonings and serve with spicy pickled vegetables, mashed potatoes and the Moscato.



Mashed Potatoes
4 pounds russet, Yukon gold, or long white potatoes
2 tablespoons salt, plus more to taste 1 1/2 cups milk or cream
1/2 cup (1 stick) unsalted butter, cut into small pieces
1/2 teaspoon freshly ground black pepper

Peel potatoes, and cut them into 1/2-inch-thick slices. Place potatoes in a large saucepan, and cover with cold water. Stir in 2 tablespoons salt. Place pan over high heat, and bring water to a boil. Reduce heat to low, and simmer until potatoes are tender when pierced with the tip of a knife. Drain potatoes in a colander. Heat milk in a small saucepan over medium-high heat until it just comes to a simmer; reduce heat to low, and keep warm. Place a heatproof bowl on top of a pan of simmering water. Using a potato ricer, press hot, drained potatoes into bowl. Stir potatoes with a wooden spoon until smooth, about 1 minute. Stir in butter until completely melted and well incorporated. While stirring continuously, slowly pour in hot milk. Stir in pepper, and salt, to taste. Serve immediately.

Clean Eating


I read Oxygen magazine from time to time to get workout tips. The magazine has some good nutrition tips as well. They often make reference to a way of eating called "Clean Eating". I did some quick research on it a while back and I decided it would be too challenging for me. It requires the removal of all processed foods (refined sugars, saturated/trans fats, overly processed foods) from your diet. It sounded like a good idea but I did not think it was realistic for me. So I would just ignore the clean eating tips in the mag.

I came across Clean Eating Magazine while getting my hair done this past weekend and after reading it carefully I realized that Clean Eating may not be so diffcult after all. You swap out refined flour and sugar for whole grains and natural sweetners (honey, agave nectar). It appears there are ways to get around eating processed foods and still enjoying your food. Clean Eating mag offers great tips and several meal plans for eating clean.
Clean Eating has tons of health benefits because you remove the bad fats, sugars, and additives from your diets. I am still doing my research and figuring out how I can move to a Clean Eating lifestyle. I will keep you all posted as I move to clean eating.

Healthy Vegetarian Greens

I would like to share my Healthy Receipe for Vegetarian Greens.

Vegetarian Greens.
My church had a farmers market on Saturday and Sunday. I was able to buy fresh organic greens. This is how I prepared them.

2 bunches of Organic Greens
1 Onion
3 cloves of garlic
1 turnip
4 cups of water
No Salt Seasoning

I learned to prepare greens from my Liberian sisters. Wash and chop greens. Chop the stems instead of pulling the leaves from the stem. The stem contain most of the vitamins and minerals. Peel and dice the onion. Smash and press the garlic. Peel and dice the turnip. Boil water add Knorr chicken buillion cube if you want meat flavor. Add all veggies to pot. Add No Salt Seasoning to flavor. Boil for 10 minutes. Stir and reduce heat for anoither 10 minutes. Turn off when greens are dark green and tender. Enjoy healthy no high blood pressure greens!

MISSION POSSIBLE: BIKINI BODY WORKOUT PLAN




So the fiance and I are headed to the Beach this week for a little a R & R. So last week I decided to do a little shopping to find a bathing suit I liked. I decided to try on some Bikinis just for the HeLL of it. To my surprise I liked what I saw, so I purchased my first Bikini ever. It's kind of surreal to me considering my starting weight ( like 205, may be even higher cause I stopped weighing myself). Now don't get me wrong I still have some work to do but I am quite comfortable in my Bikini. Anyway I wanted to share with you some of the strategies I used in toning up this summer. I also wanted to share some articles that kept me motivated this summer.
My strategy:

This summer I really tried to mix things up. I started attending a variety of workout classes like spin, body combat, and body pump. I still run but only on days when I can't get to the gym (about twice a week). I also started lifting more weights (body pump is great for weight lifting). My advice is to constantly change up workout if you want to see results.

I also tried to change up my diet a little bit by increasing my fiber and protein. I typically eat fiber loaded cereal (oatmeal) and hardboiled eggs for breakfast (if I am in a hurry I eat Kashi Go Lean Crunch). I increased my green tea intake to a minimum of 3 cups a day. I also started drinking wine instead of cocktails and increased my fruit and veggie intake.

So if you haven't already sign up at your local gym/YMCA (they have classes too) and enroll in some workout classes. If you that's not option try Exercisetv.com for free workout videos. They have 88 free full length videos.
